Is there any technological justification for this diversity or is simply whim of design? A trivial answer is that to get real bass a large speaker is needed. That is effective but it seems to be more like a intuitive response than a justified one. The fact is that the principles that govern the behavior of the baffle and the electro acoustic transducers that compose it, is quite unknown to the common to the music enthusiasts, which tend to attribute ideal technical properties comparable to the remaining parts of the sound system, such as the amplifiers, CD players, equalizers, etc.

We must take into account that only a few decades ago it was unaware the behavior that would have a driver, or electro acoustic transducer, within a baffle. Magnitudes such as frequency response, cone excursion, impulse response, group delay, phase delay, were not possible to predict for the driver-baffle system and the final product was the result of long tests and experiments with different volume enclosures, ports, dampening, etc. This because until recently it had not been deducted a mathematical model for the behavior of the electro acoustic transducer within the baffle.

The dynamic loud speaker has remained virtually unchanged since its invention in 1925 by Rice and Kellogg, two engineers at General Electric Research Laboratory. The technological advances has improved its manufacturing process, the materials and the design of the cone, the power of the magnet, but the physical principle has remained unchanged: a diaphragm coupled with a coil which is within the magnetic field of a permanent magnet, oscillates due to the alternating current applied to the voice coil. This simple principle is that allow to produce sound in almost all of the baffles in the market. The electrostatic and plasma speakers, among others, are an alternative way to produce sound but, due to physical and technical limitations, they have had little market penetration.

The advent of sound films was a great impulse for this industry, but the baffle-transducer system remained a mystery. It was not until 1972 that Richard Small, based on previous work of Neville Thiele, publishes, in the "Journal of the Audio Engineering Society", a series of articles covering the analysis of baffle systems, in closed and vented boxes, using a equivalent circuit. It must have been seven years ago now that I decided I needed a food processor in my kitchen. My wife and I share the cooking in our household and I've always enjoyed being adventurous in the types of meals that I prepare. I'm always up for trying something new.

It's hard to remember exactly why I decided that I really needed a food processor when I'd been getting by without one for a lot of years. The following were my main reasons.

To save me time and effort, leaving me to focus on the more artistic and creative aspects of the meal.
We regularly cater to large numbers of people in our family and I needed help with the sheer volume of ingredients to be prepared.
I'm just not that fast with a kitchen knife when it comes to all the chopping and peeling.

So, what were the main things I was looking for in my mental checklist of characteristics in my ideal food processor?

Big Capacity - it had to have a suitably large maximum capacity

Versatile - it had to be an all singing, all dancing type of machine so that I wouldn't need to add much else (if anything at all) to my array of cook's appliances

Compact - when not in use, it needed to have a small footprint and not require a whole cupboard of storage or a whole counter to itself

Robust - it had to be sturdy and able to take a lot of wear and tear in the kitchen

Reliable - it had to last a long time

So, what was my choice of food processor? It was the Magimix Cuisine Systeme 5150. All I wanted for my birthday was for my toilets to work. Well, that's not really the only thing; it's just high on an extensive list. You see, I've lived in the same townhome for seventeen years this month and things are beginning to decay, along with its owner, but I'll get to that later.

I only have a few dislikes in life; two of them that I really detest are: stoplights and malfunctioning and obstinate toilet mechanisms.

Stoplights are easy to hate...they turn red when you're in a hurry and don't want to stop, plus, we so much waste gas sitting at them. I probably waste more gas by driving around the block to avoid them. Why haven't more American cities utilized the roundabout that much of the world utilizes?

Toilets are another story altogether.

They often continue to fill wasting precious water because the design of the internal mechanism is archaic. Ostensibly, there's a black ball that is supposed to float to the surface of the contained water and shut off the valve when the tank is full. Well, it never floats high enough and constantly requires time and attention.

Having reached that frustrating station in life where the toilet is becoming a close personal friend, because of too much coffee, tea, wine, water, or whatever, I now visit my confidante during the night more than I used to.

Finishing my business, I sleepily get back into bed while the toilet is filling. I wait, thinking the contraption will shut off eventually. I pull a pillow over my head, so I won't hear what I'm thinking about. But it's still there, running monotonously.

Peeved, I get up, take the tank lid off, pull up the rod, slam the lid back on and storm off to bed. But now, I'm too upset to get back to sleep. Brother, I gotta get a life or more patience.

In my usual pragmatic manner, I really tried to solve the problem: I've bent the rod attached to the ball to make it lower, given the intellectual understanding that the pressure of being further under water would add more force on the ball to surface; I've lubricated the valve with so much WD-40 that an oily film now coats the inside of the tank; I've extended the ball to the absolute end of the rod, thinking that if it was further from the valve and lower in the water it had to pop up and shut the system off.

Right.

In a world with of such fancy gadgetry like: cell phones that take pictures and connect to the Internet, satellite guided navigation systems mounted in the dash of your car; wireless hand-held computers; watches that do everything but make coffee; his and hers individualized inflatable mattresses complete with a sleep numbering system; implanted chips in our pets to identify them if they get lost...why can't we invent a toilet that flushes, forever!?!

I know I know, I should just be happy and grateful that there aren't any telemarketers bugging me at 5:15 pm each night anymore. Did you ever notice that they never sell new and improved toilet flushers? I should just eat mass quantities of chocolate, it's supposed to help men cope.

Anyway you look at it, toilets are a pain in the butt (sorry, I couldn't resist myself).

Long years ago, my Dad remodeled his bathroom. The color of the era was pink. This past year, the toilet went kaput and a new one was needed, but do you think a pink one could be found? No one sells pink anymore, we were told. Not even to Mary Kay with her pink Cadillac's?

And what's up with padded toilet seats? I hope I don't get any of those for my birthday. I hate it when I go to someone's home and there's a padded toilet seat. They just don't seem natural. How do you clean it? They're just weird to me.

And where did the blue water things go? None of my friend's use them anymore, did blue go out of favor just like pink? I digress.

Well, to be forthright, I've already solved the problem. Or I should say my Dad did. He couldn't stand the toilets running on either (it's a family thing), so I bought the replacements and he changed all three of them for me as a birthday gift...how 'bout that?

Thanks, Dad. I love being a kid, even if, an inept, 58 year-old one.

These new flushers are revolutionary though, no ball, no rod...no foolin'. It's a self-contained plastic mechanism that's a complete mystery, just like Santa Claus.

The only obvious drawback is when it stops working, I can't bend, submerge, oil or extend anything. I'll have to buy a new one. Therein lies the rub: planned obsolescence. The manufactures are always a step ahead of us, huh?

Well, at least it's one item that I can check off my "All I want for birthday" list. I wonder if I'll get the Ronco onion chopper or the Chia pet I've ask for? Hmmm.

If you are like me, you own either a full-size food processor with all the bells and whistles, a fabulous mini chopper or maybe even both! But do you use them? Honestly, do you really use them as you intended when you purchased them or do you find yourself grabbing for a knife and a cutting board? Why do we spend our money on things we don't use?

It seems as if I am not the only one who does this. Many of my friends have that $300 red stand mixer and I've yet to be invited for cake! But, we have to have them they will inspire us and put the fun back into cooking, right?

I like to pour myself a glass of wine, scan through the Epicurious App on my iPad and pick out an amazing Greek dish to whip up for dinner. Very modern of me!

However, reality sets in, so after realizing I don't have and fresh nutmeg to grind in my $50 grinder, I sigh and make a simple meal of scrambled eggs and frozen perogies sauteed with onions. And yes, I use my knife to slice the onions!

Curious how I resort right back to the ways of my mother and grandmother, not the spending hours a day cooking part, but the use the basic tools part. My grandmother spent many, many hours cooking many, many meals and yet I don't remember anything on her counters except a cake plate and a spoon rest.

So..."Why are we spending so much money on a place where we spend so little time?".

Why do we spend hundreds of dollars on a blender that does everything from make salsa, to soup, to smoothies to mayonnaise when all we may do is make a margarita twice a year? Is it because we have turned the once utilitarian workplace of the house into an upscale entertaining mecca that our guests visit?

Stainless Steel- Stainless steel is one of the best choices for cookware, as long as it is properly cared for. Stainless steel is nearly non-stick and heats evenly, especially if it has an aluminum clad bottom. Never use scouring pads or metal utensils with stainless steel. Scratching the inside of the cookware can allow small amounts of chromium and nickle to leach into your food. Be sure to follow cleaning instructions from the manufacturer when caring for stainless steel cookware.

Copper Clad Exterior with Stainless Steel Lining- To retain the shining copper exterior on copper clad requires more care than just stainless steel. It also allows the benefit of copper's ability to conduct heat. The stainless steel interior should be cared for by avoiding scratches of any kind. Once again, follow manufacturer's instructions when cleaning your cookware.

Aluminum- Regular aluminum cookware has been on the market for ages. It heats quickly, is lightweight and costs less than many other types of cookware. Aluminum can be reactive to acidic foods. Copper Cookware- Copper cookware is very pretty, but if not cared for properly it can also leach into your food. It is usually coated with a protective layer to prevent this from happening. I would avoid using this type of cookware if it is uncoated or the coating is scratched or dissolved. For best results, follow the instructions given by the manufacturer.

SilverStone and Teflon- SilverStone and Teflon are both non-stick cookware finishes. They make cooking and cleanup a breeze, but they can also emit harmful fumes when used over high heat. When scratched, small amount of the coating can also get into your food. Don't use Teflon if you have a pet bird. The fumes from cooking with Teflon is hazardous to birds.

Cast Iron Cookware- Cast iron cookware is one of the best choices for cooking. It conducts heat evenly and has no hot spots. When properly cared for, it is a nearly non-stick cookware. Since we need iron in our diets, the small amount of iron that leaches into food is actually a benefit. Cast iron must be seasoned to keep it from rusting. Follow the instructions that come with your cookware to ensure a properly seasoned finish. Due to the thickness, it heats up more slowly than other types of cookware. It is also extremely heavy, which can be a draw back for people with hand or wrist problems.

After much debate, I finally decided to buy a quality set of stainless steel cookware. I'm caring for the finish as recommended, and I'm making sure to only use wood or plastic utensils when cooking. This set of cookware should last for many years to come.

I already have a 13" cast iron skillet and absolutely love it. The only reason I chose stainless steel over cast iron was because it's hard to find cast iron saucepans in the most common sizes. I may yet add a smaller size cast iron skillet or griddle to my cookware collection before I'm completely satisfied.

For home cooking, while certain basics are necessary, nothing is set in stone. Different cooks need different things. This is an outline to help you make sure you have at least the bare minimum without breaking the bank.

Cookware

There are many different types of cookware. This is where I do not skimp on price. Quality cookware will last a lifetime and is a worthwhile investment to make your home cooking experience enjoyable.

Cookware is manufactured with a variety of materials but my top three choices are cast aluminum, cast iron and stainless steel. Cast iron probably distributes and maintains heat the best. It is also the least costly of my three choices but it is also the hardest to care for. If properly maintained and seasoned it takes on an almost perfect nonstick finish and will last for years. Without proper maintenance it can discolor and rust. Stainless steel is extremely easy to maintain but does not distribute or hold heat as well as cast iron or aluminum. Stainless with a bonded aluminum bottom is an excellent choice. Cast aluminum is probably the best all around choice based on its properties. It spreads and holds heat almost as well as cast iron. It is lightweight and almost as easy to care for as stainless.

Cookware to have on hand

While the most cost effective way to buy cookware is to purchase sets it may not be necessary for everyone. You can always add pieces later. They may not match but functionality is more important than appearance for the Home Cook. Feel free to either add or eliminate pieces to this list as you see fit. If you are just starting out and are only cooking for one or two you most likely don't need three saucepans. Always keep in mind that you can get specialty items as needed. In other words - if you don't plan to bake pies for a while don't buy pie pans.

Sauce Pans 1, 2, & 3 Qt. With lids
Stock Pot with lid 5 or 6 Qt.
Skillets 6 in., 10 in., and a 12 or 14 in. preferably with lids especially for the large one.

I also have on hand a fourteen inch Wok type cast aluminum fry pan with a rounded bottom that I find extremely useful. I use it a couple of times a week for many dishes from stir fries to frying chicken. It is a heavy gauge aluminum for which I find many uses. Heck, I even used it once to make loud noises to chase a stray dog out of the yard.

Ovenware and Bake ware

For the oven what you need on hand just depends on what type of cooking you want to do and how many people you cook for in your home or on how much entertaining you intend to do. The list that follows is the minimum that I like to have available but my home cooking needs are limited to a family of three and a Chihuahua. My wife likes to bake a lot of cookies for the holidays so I keep at least 5 cookie sheets around for convenience.

For ovenware or bake ware I mostly stick to glass or porcelain coated cast iron except for cake pans and cookie sheets. There I prefer nonstick aluminum. I keep two loaf pans - one glass for meatloaf and one nonstick aluminum for things like carrot cake and zucchini bread.

2 9in. cake pans
2 8 or 9in. pie pans
15 1/2x10 1/2x1 in. cookie sheet number depends on how much you like to bake cookies or dinner rolls. I recommend at least two.
9x5x3 in. loaf pans 1 glass and 1 aluminum

Knives

For your cutlery choose wisely. Go for quality over price. Cheap cutlery is no bargain. Choose either carbon steel or stainless steel. My preference is good, high quality stainless. It is easier to care for than carbon steel and holds its edge almost as well. Stay away form serrated knives with the exception of steak knives and maybe your bread knife. Serrated edges tend to tear raw foods rather than cut cleanly, especially with meat. Always sharpen your knives by hand with a stone or a butcher's steel. Electric sharpeners will eventually ruin the edge. Also, when cutting with your knives always do it on a surface that is softer that your knife. I recommend a wooden cutting board at least one inch thick. A thickness of one inch will help to prevent warping. Be sure to clean the board thoroughly as soon as possible and dry it completely to prevent warping or cracking.

Chef's Knife - the one with the triangular blade - 7 to 14 inches long. I prefer one that is between 8 and 10 inches.
Bread Knife - 8 to 10 inch - this is better if serrated because it takes less pressure to cut through fresh bread so there is less chance of crushing the loaf.
Paring Knife for peeling and coring fruits and vegetables.
Swivel bladed vegetable peeler - takes only the peel - a paring knife tends to take a little more of the pulp unless you are really skilled so use it mostly for coring.

Measuring Cups

Not much to say here. They are available in many varieties, both glass and plastic. I use only two. Both are glass as the markings are easier to see. Plastic is more opaque and the measurements are harder to read. Get one that measures up to one cup and one that measures up to two cups in glass with bright red markings.

Stocking Your Kitchen

While you could spend a small fortune to stock up on stuff you may use some day but will most likely throw out when it expires I think it is better to purchase a few basics and then buy other things as the need arises for specific recipes. In most instances fresh ingredients and spices are best but some processed and dry items are very handy for day-to-day home cooking. All other items can be picked up on an as need basis. The following list is what I keep on hand.

Dry bread crumbs plain and Italian
Corn Starch - a great thickening agent for gravies and stews
All purpose flour
Spaghetti
Rice

Baking soda - more for heartburn than for cooking. I buy baking powder as needed.
Vegetable oil
Olive oil
Honey
Syrup for pancakes
Sugar - don't buy powdered or brown sugar until you need it.

Spices

These are some basic spices and dried herbs that I keep on hand. Most others I will buy fresh as needed. Please remember that even these packaged spices lose potency over time. Plan on replacing any unused portions at least every two years and purchase the smallest bottle or jar you can. Be sure to store these items away from sunlight and heat.

Tarragon - I like this herb in a lot of things, spaghetti, omelets, whatever, I even found a recipe for liver with a Mustard and Tarragon Cream Sauce the I like much more than liver and onions.
Thyme

Condiments and Sauces and Coffee and Stuff

This is a personal preference so I won't make many suggestions. You know if you like catsup and mustard and not mayo. I like mustard. I keep a variety of different prepared mustards on hand for different purposes. Dijon, Spicy Brown, & Hot Sweet Mustard for things like crackers and cheese Southwestrn Mustard for Chorizo Sausage, & regular Yellow Mustard for hot dogs and burgers. Pickle relish should definitely be on your list if you like hot dogs. Other condiments like taco sauce, seafood sauce, tartar sauce, or any other specialty items just depend on your personnal preference. Their are just too many special items to list here.

Coffee is also a personnal choice. I like a medium roast and drink it "black and nasty". Coffee is available in many roasts and grinds. You can also get many specialty blends like Mocha and Latte as instant coffee. Some of them are quite good and add a little positive note when served after dinner when you are entertaining.

I like salads. Sometimes I prefer to make my own dressings but I do not always have the time. When I purchase prepared salad dressings I do tend to stay away from store brands which I think tend to be a little bland. You do not have to buy the most expensive to get a good dressing. Check out a few brands to see what suits your taste. As with most things in Home Cooking experiment until you find what works for you and your family.

Terracotta Clay Bakers Bakeware Care Guide

Many consumers have emailed me on the use and care of terracotta cookware. They have said: "OK, I purchased my clay bakeware, now what?"

Excellent question and I will try and help.

Before using your terracotta cookware for the first time, wash thoroughly with hot water. Do not us soaps.

Each time you use your clay bakeware, immerse both the top and base in cold water for about 15 minutes. Pour off excess water. After adding all the ingredients place your terracotta bakeware in the center of a COLD oven.

DO NOT ADD COLD LIQUIDS once the clay cookware is hot.

DO NOT PLACE your terracotta bakeware over on open flame or hot cooking plate.

Regular recipes can be converted for clay pot cooking by increasing the cooking temperature by 100F and deducting one-half hour of cooking time.

Terrcotta bakeware is ideal for the microwave. Because microwave ovens vary to such a great degree, use the oven manufacturer's guidelines for cooking times.

Take care not to shock by clay pot cookware by moving it from one extreme temperature to another.

Use pot holders or oven mitts to move your terrcotta bakeware when hot, and place it on a trivet, mat or folded dishtowel when moving it out of the oven.

Cleaning after use: use hot water only, and a stiff natural bristle or mylon brush, or a nylon scouring pad to clean your clay pot cookware after each use. DO NOT USE SOAPS. A little baking soda will cut any grease. Never use cold water when the terracotta bakeware is hot.

When not in use, keep your clay cookware in a place where the air circulates. Place lid upside down on top of base when storing, to allow air to circulate inside the bottom of the roaster.

Use one clay pot cookware for fish and a separate one for meats, to keep the flavors separate.

In summary:

Hand wash your terracotta bakeware in hot water with some baking soda and a nylon or natural bristle pad or brush.
Do not wash with soaps or detergents.
Always place your clay pot cookware in a COLD oven.
Take care to avoid extreme temperature changes, ie. placing it in a hot oven.
Never pour hot liquids into a cold clay pot cookware, or cold liquids into a hot terracotta bakeware.
Always pre-soak for 15 minutes.
Avoid open flame or hot plate.

Clay pot cooking saves time, reserves nutrients and vitamines, avoids excess fats in cooking.

Terracotta bakeware for healthy natural cooking.

One of the best holiday meals I have tasted recently was baked in a clay pot.

Cuisinart - Can a Company That Sells Empty Boxes Survive?

Put yourself in this position. You are manufacturing a kitchen product that has become so popular that during the Christmas rush sales season one year the demand is so strong that you can't produce enough product to fill orders. What would you do? Shrug it off and plan on trying to recapture these sales after the season ends?

The problem with that idea is that the American market is very impatient and will probably move on to another brand before you can get the product produced. Forget about it and plan on being prepared for next years Christmas season? Might work but you will loose thousands of sales you may never recover. Something may happen to the market next year and you may not see this kind of demand. How can you possibly save the sales for this season? First let's take a quick look at how this company got into this dilemma in the first place.

Once upon a time not so long ago there was a very industrious gentleman who was in the food business and had the idea of selling more expensive products than food stuffs. He remembered a trip to Paris in years past where he had watched a demonstration of a commercial food processor. He was impressed with the results the machine produced but did not think that the bulky machine would sell in the home market. Thinking about it now he made arrangements to purchase the rights to produce a smaller version of the commercial machine. He redesigned the machine and put in improvements and was ready to meet the market.

When his new machine did not receive an enthusiastic response he decided to send some of the machines free to well known cooking personalities who quickly took to the machine and sang it's praises. o Karchi - This is type of ladle that has a long handle. It is also used for actually "doling out" curries, lentils and gravies.
o Palta or the Khunti - This is a teal type of spatula that has either a triangular or square headpiece as well as a long handle. It is very convenient for turning fish meat and vegetables, as well as for stir frying in an open pan.
o Bonti - This is crescent shaped, sharp edged blade that is being screwed onto a rectangular and solid piece of wood. This is common not only along the coastal areas but also in the eastern parts of India as well. It can be used for chopping, peeling, slicing vegetables, deveining prawns and making fillets.
o Thalis - These are large platters that go hand in hand with bowls or "Katoris", particularly used in serving food. In Indian culture, the bowls and plates of the rich are made out of silver, while it is either clay or brass for the commoners. There are also those who use the Banana plant's leaves or the Saal trees'. These serve as disposable, hygienic and bio-degradable plates. It is still being used during community meals.
